Conscious Cooking & Community is returning to our roots. Food is prepared by our hands using simple ingredients from the Earth. People work together in a kitchen and share food together. Sure we are all going to be in our own personal kitchens and connected online through video but that is the magick we are creating together. The ability to be connected, even from a distance and to ask questions as you create the recipe in your own home so you can easily make this again. And if you have the time, we can enjoy the meal together.

Vanita, I wanted to reach out and say thank you for teaching me how to make loaded sweet potatoes with vegan cheese and mushroom bacon. I had a fun time following along, cooking beside you, virtually.
I loved how you inspired the participants to choose ingredients according to their taste, with guidance on how to use them, and, sometimes according to science, sometimes according to taste, why we would want to use certain ingredients. I think your doctorate in biology adds knowledge to your classes that I wouldn’t normally get.
I also love how we gave thanks for the food and we set our intention before we began. We cleaned our pallet, so to speak, with breathwork and an energy shake off.
I was able to follow your method via the many cameras you had set up. When we needed guidance you happily gave instructions and showed us on your cameras.
At the end of class, we took our first bites together. The food was so yummy! Later on, my husband and toddler enjoyed the meal with me. My husband, who usually won’t touch a mushroom, heard me raving about it, tried it, and decided to add it to his plate. My toddler wanted to eat it off my plate too! The veggie bacon is so flavorful, delicious, and packed with goodness!

Loaded Sweet Potato Skins
Plant- based Super Bowl Snacks for a super good time. Using sweet potatoes, a homemade nut based cheese, and bacon made out of shiitake mushrooms you can eat your favorite half time snacks without the guilt. And with all the nut-based cheeses and fake bacon in the market today, you can cut down on the to-do list and use a store bought cheese and bacon, but in the meantime you can learn how to make nutritionally dense, gut healing and body loving versions in your own kitchen.
- sweet potatoes
- shallots or onions
- spinach, kale or chard
- shiitake mushrooms
- raw cashews
- raw pine nuts
- lemon
- scallions or chives
- liquid smoke
- toasted sesame oil
- coconut aminos, braggs liquid aminos or soy sauce
- nutritional yeast
- tapioca flour
- garlic clove

- cayenne or paprika and spices you have at home

- Blender - preferably high speed or immersion blender or food processor*

For the Love of Chocolate
On a day dedicated to love celebrated with chocolate, why not love your body with a vegan gluten-free decadent chocolate cake made from...wait for it...eggplant! Yep. You would never believe that this cake has no refined sugar, no grain, no eggs, no dairy and its main ingredients are eggplant and nuts. Love is the answer and we will talk about self love and healing.
Ingredients will include:
- eggplant
- banana
- chocolate
- maple syrup
- vanilla
- almond flour
- cacao powder
- baking powder
- baking soda
- salt
- nut, flax, or oat milk or regular milk
- coconut oil or an oil for the baking dish
Equipment to be used:
- Blender - preferably high speed or immersion, though a regular blender or food processor will work well*
- a small pot
- larger pot or stainless steel bowl or a glass bowl that sits on top of the small pot without touching the bottom
- a loaf pan, small baking dish or cake pan
- mixing bowls
- mixing spoons
- parchment
- whisk

- cutting board
- toothpick

Fantastic Fungi
When I was college I learned that chicken-fried steak was just a fried steak. Well this is a "meaty" vegan chicken-fried mushroom served over squash noodles with a savory, creamy, rich-yet-light tasting mushroom sauce with butternut squash. Mushrooms are finally getting the respect that they deserve and when we eat them, our bodies thank us. This class will use mushrooms in several ways. Feel satiated, satisfied and oh so good with this filling and yet light meal. In this class you will learn about mushrooms and their power to connect us and heal.

Flavors of India
In this class I will be drawing from my roots to create a healthy plant-based meal without meat loaded with more nutrition than is typically found in typical Indian cuisine without loosing the heart or flavor. We will be making a vegan chicken tikka masala with a cauliflower rice pulao.
